Here's my question for today: What's the name for Italian meat sauce made with sausage? I have some Bob Evans I need to use and a jar of Newman's Own, so that's what I'll make for my dinner.
I'm pretty sure it's
"ragu", same as if made with hamburger.
You might also consider it a
"bolognese" sauce, although it's difficult to say where ragu ends and bolognese begins.
In my culinary experience, ragu is more akin to what we Americans eat...with a hearty base of tomatoes and tomato sauce and paste...but also with a fair amount of meat.
Bolognese is more minimalist in its use of tomato sauce and paste, but is meaty.
I've had "tortellini bolognese" and other bolognese concoctions and they've all pretty much tasted like one of my spagehetti sauce recipes that I have long loved.
I probably use more tomato sauce than a true bolognese calls for, but I am very generous with the meat quantiy, too.
