And a men's Croatian klapa ensemble, whom I worked with when i was AD of Radost Folk Ensemble, sang at the auction - how beautiful that music is, how moving when you get to hear it live!

Yes - some of it is WAY more aggravation than I'd like - but I'm an old Folkie from the sixties, and my personal mission is the preservation and stewardship of these music and dance traditions for the future... it's why I still pick up a guitar and sing the old songs every chance i get. Knoephla soup is a regional delicacy
Interesting.  I hadn't heard of this before, and had to look it up.

Onions and potatoes in a chicken broth, with the knoephla (small egg and flour dumplings) cooked in the boiling broth, and cream added at the end when the knoephla and potatoes are cooked.  It's origins are from Germany.  Sounds tasty.

For some reason, my culinary excursions to date have never really included making much soup; I make chicken stock by the gallon every few months, but that's about it. Surprising, because I love just about every hot non-tomato-based soup I can think of... chicken, vegetable, potato-leek, squash, french onion... bring 'em on, and have a second bowl ready, please! Favorites include a spicy wheat-berry soup that my mother used to make regularly, and now almost never does, and grunkern (roast spelt) soup, a delicacy amongst the German-Jewish denizens of my neighborhood.

And, fercryinoutloud, do *I* have to be the first to point out the following line from today's post?

Speaking of soup, I was thinking about fixing up some French Onion tonight.  Following Julia Child's recipe, of course.

(What's great about making a batch of the French Onion is that, later on, what's left over makes a great braising liquid for pot roast!)

There are a lot of Germans in North Dakota and throughout the plains. Ironically depending what part of the state or German group is closest to you there are slight differences but the basics are the same. Germans from Russia have a more spartan recipe and the Reichsduetschers will sometimes add a bit of meat. My grandmother would sometimes add a bit of shredded beef or chicken if she had some left over.

I saw some gorgeous fall foliage views driving down the Merritt Parkway on my way to work this morning.  However, I decided not to try to snap them while traveling 65 mph on a narrow, 2-lane highway.

Sounds a lot like kreplach to me.... good stuff, no matter how you go. There's also Kartoffelklosse (potato dumplings); one of my first recipes from the Joy of Cooking, and a key weapon in my arsenal for wooing The Lovely Wife(tm).

Sheesh, now I'm getting hungry...
