I'm reading all kinds of crazy additions to chicken salad.
Relish.
Feta.
cranberries.
Nothing weird or crazy about any of those additions to me. -Now, I don't think I would put all three of those together at the same time, but...
Relish is much easier to add instead of chopping up pickles. -And a lot of classic chicken salad recipes call for pickles/relish, since it's just like tuna salad, but using chicken instead.
Now, I'd probably use the feta and cranberries together, and probably add some walnuts or almonds too to the mix. -There's a great salad combination of feta, cranberries and toasted hazelnuts mixed with radicchio and romaine.
To me the relish sounded semi-normal.
I love feta. So it wasn't that i thought i would dislike it. It's just i never in a million years would have thought to include in a chicken salad.
And the cranberries sounded just weird to me.
I ended up making a delicious combination.
I had already cooked and chilled the chicken.
I put celery and onion in the food processor. And a bit of dill. Lemon juice. Garlic salt. Pepper. Mayo. And the chicken. And one tablespoon of relish.
No feta. No cranberries.
I put the chicken in last. Although i wanted it like chicken salad spread and not chunky.
It turned out so good. I had it on a piece of pumpernickel bread. Yum!
