Whoa!

They're rebroadcasting the Coconut Cake of "Throwdown with Bobby Flay" on the Food Network.  The "Challenger" is the Coconut Cake from The Peninsula Hotel in Charleston, SC.  -And, yes, I've had a slice of that amazing cake.  And now I know why that cake was/is so amazing...

Each six-layer cake contains three cups of butter and six cups of heavy cream!  -And I think each cake only is only sliced/serves eight.  Yowza!

*Oh, I just checked the site for the Peninsula Grill - Each cake serves 20 "very generously".  Whew! ;)

*You could place some toothpicks around the "middle" of the cake as a guide for your knife.

**Or you could use dental floss - unwaxed and unflavored - to "saw" through your cake.

Look how perfect those layers are, now that I know how they were cut, that's pretty amazing

Whenever I've assembled layer cakes, I've always found getting even layers of filling/frosting to be the hard part.

There's also one other cheat for perfect cake layers - and I have seen this in a few cookbooks...

Just divide the batter into three, four, six, etc. portions, then bake each portion/layer separately in their own pans.  Adjust baking times accordingly. ;)

I only tried a layer cake once.  When I was in high school I tried to make a layer cake for my best friend's birthday.  It ended up being a heap of cake with frosting poured over it...a total disaster.  It tasted good, so I guess it was only a visual disaster.   I may try one again

At one point during the rehearsal, Joshie was listening to the cello part I'd written and he turned and said, we think alike! I think his prowess as a musical director was very helpful this evening.

If some cooks have that kind of time and patience, then more power to them.  For a layer cake, though, having consistent layers can be a motivator.

One can still trim off brown crust...and have a thin layer to boot.

I have a device that has a wire that can be positioned in four ways to yield the desired thickness of layer.

The end result seldom pleases me.  I should probably wait until the cake is totally cold.

The Fed Ex charge was over $100 of it so it's closer to $5 a slice without shipping

I need to start thinking about what I want to serve for the open house at the office.  It's a 4:30-6:00 pm thing on ground hog's day.  The thing is I have no idea how many will come.  I'll invite my friends and the local lawyers, so I can get an idea there, but it's also going to go out in the Chamber of Commerce email blast.  I have no idea if many or any will show up from that - other than the ribbon cutters.  Hmmmm
