I just typed up the new pumpkin bread recipe I tried last week. In case anyone is interested.
PUMPKING BREAD
1 can pumpkin (15 or 16 oz)
1 3/2 cups sugar
2/3 cup vegetable oil (canola)
1 teaspoon vanilla
4 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 + teaspoon nutmeg (buy whole & grate)
1/8 teaspoon ground cloves
1/2 teaspoon baking powder
1/2 cup dried cranberries or raisins
Heat oven to 350°
Use an oil with flour spray (Joy or Pam) and spray the pan
In a large bowl combine pumpkin, sugar, oil, vanilla and eggs: blend well. Stir in remaining ingredients except raisins. Mix until well blended Stir in raisins
Pour batter into prepped pan and bake until toothpick inserted come out clean
Cool in pan 10 minutes before removing from the pan & cool completely
