It has been a long day. The food conference was really informative and full of great recipes/ideas/food trends.
A coconut chia pudding was among the more interesting (and vegan) dishes, but corned beef brisket stew with sofrito jam may have been a favorite. Don't know how Latin corned beef is, but since it's not Irish, either, it doesn't matter.
And of the dishes demonstrated that we didn't get to try, a crispy corn quesadilla with with rajas and tomatillo salsa sounds best.
