TOD:
For people don't particularly like vegetables, the best thing to do is to roast them. When vegetables are caramelized, they take on a very different flavor and are very yummilicous. You can find lots of recipes for roasting vegetables online.
Personally, I love vegetables but I don't love to cook, so I just nuke them in the microwave and drizzle a bit of soy sauce on them, and I'm good to go.

Monday morning greetings!  Because of Richard's and Rob's conflicting work schedules yesterday, we're having our family Easter dinner tonight.  I made green Jello eggs last night and this morning have already been to buy a Honey Baked ham.  Soon I'll put together my version of Mormon Funeral Potatoes (no sour cream, fewer onions, grated Cheddar cheese on top instead of corn flakes) and get some green beans simmering with some chunks of the fresh ham.  Mary Linda made a cheesecake yesterday for our dessert.

On a visit to my Wife of First Cousin Once Removed and her family in West Virginia several years ago, they had a sort of potluck lunch and someone brought these potatoes with the corn flakes.  I'd never had it, and at first couldn't put my finger on exactly what the dish consisted of, but it was quite yummy in an interesting way.  I got their recipe, and what they'd always called it was Company Potatoes.  It's quite the down home comfort dish, which I'd been associating ever since with West Virginia but obviously it's quite widespread.  I'd never come across it by either name.

I got in this morning but I can't get a room until 1:00pm or so.   So. I had breakfast and walked around a little.   Stopped in Starbucks for some water and to charge my phone, it's rather muggy today.

Miss Saigon tonight with my friend Peter.  Looking forward to seeing this show on the Broad-way.  It's one of my faves and I feel it's superior to the "Other" one.

I will eat most any vegetable any way you serve it.

I love raw best, with maybe a bagna cauda dip on the side.

Root vegetables rubbed in olive oil and roasted are wonderful.

Vegetable pies can be great, from onion to sweet potato.

Give my regards to Broadway, DR Matthew, and enjoy MISS SAIGON!

I served my version of the funeral potatoes with meat loaf one time when DR Elmore was here for dinner.  He thought at first it was cauliflower and I've always meant to try that.

Does anyone else remember a time when folks not only posted comments about their favorite dishes, but also recipes for same?

I spoke with my Cousin Debra this past Thursday evening.

Please don't alert the media.  This revelation is only for your eyes.

Debra is an RN in charge of a medical group in South Carolina.  We were talking "family health issues" and she told me about something that has done wonders for her husband who has heart issues and diabetes 2.

She said that some recent lab results were so startlingly "normal" that she and his doctors thought a mix-up had happened.  So they did the labs again and the results were the same.  His triglycerides were well within normal parameters, his A1C was low and normal and his blood sugars were normal.

To what did she attribute this?

He had begun craving dill pickles and pickle juice.  That had turned the tide for him, except for the hypertension all the salt induced.  How did he handle that?

He began taking a tbsp. of Bragg's Vinegar every day.  The results have remained steady.  She said this vinegar (Bragg's organic raw apple cideer) is the new wonder tonic for diabetics.

Since it's not going to hurt me any, I'm going to start doing this today.

All right.  I'm out of things to day if, indeed, I had anything to say before now.

The same day DR Jennifer gave the book 4 stars on goodreads another friend did the same.  Since I often like books they both read I checked it out from my ebook library.

DR Jane, I actually read I See You by Clare Mackintosh recently. I read I Let You Go last year.

It's a cool, dreary, muggy day in Oakland CA.  Dreary because of rain.

Rain, rain....rain.
