LOVE a cream cheese olive sandwich. But there's no history of it in my family. I originally discovered that flavor sensation by ordering an everything bagel with olive & pimiento spread at an excellent (and now-defunct) bagel jernt here in town. Later I started buying their spread. But that's a silly expense because I realized that to make it yourself you only need to dice the olives and stir them into cream cheese. So I did that for a while. Then one day I was famished for that taste but I had no bagels, so I took out whatever bread was here, spread the cream cheese, sliced a bunch of olives in half lengthwise, laid them out on the spread, and it was out of this world fantastic. You can also sprinkle a little extra brine on the thing for even more yummity flavor and moistness.
For me it would be worth buying a large jar of olives, dicing the whole thing up, and having it at the ready. Or just make the spread again, but make it even denser in olives than you'd normally find in a prepared spread.
