Four pages of posts already! Impressive. I'm... you guessed it... very BUSY today, so I won't have time to read the posts until later. But here's a recipe for Chicken Paprikás (the "s" when alone in Hungarian is pronounced "SH" - thus there is no need to spell it "paprikash" as is often done by non-Magyars like the esteemed bk.)

The Recipe for PAPRIKÁS CSIRKE (pron: "CHEERKEH"):

Steal one chicken (...couldn't resist)

Use skinless chicken breast, legs. Cut breast into quarters (or smaller if your prefer).
Put a little oil into a large pot. Dice an ONION into pot and sauté until starts to get reddish. Then add a diced GREEN PEPPER.
Add salted CHICKEN PARTS and sauté until meat starts to turn white (10 mins? or less)
Then add a sliced, peeled TOMATO and 2+ tablespoons of PAPRIKA (I usually add more as I'm cooking) Try to get real Hungarian paprika - the flavor is much better.
After about 10 mins. add enough water to almost cover mixture and add SALT.
Cover the pot and cook on low until done (about 45 mins - but this can vary.)
(Some people add sour cream to all this. Hungarian Jews tend not to do that, so I grew up sour cream-less in my chicken paprikas. I have no idea of how much or when to add sour cream and I don't like it with sour cream so DON't DO IT if you're inviting me.)

Now here's a bonus:

NOKERLI (LITTLE DUMPLINGS)

Easy to make and superb with above. If you don't want dumplings, you can add raw diced potatoes to above during last 20 mins of cooking. Or you can simply boil up some potatoes. But I recommend the dumplings.

Beat 3 EGGS in large bowl.
Add 2 cups FLOUR, pinch of salt and 1 1/2 tblspns. OIL
Add WATER as needed until dough is sticky and spoon can stand up in it
BOIL a large pot of water.
Put the dough you've made on a wooden cutting board. Take a little at a time on the end of a spoon and drop it into the water (You'll have to experiment with the size - not tooo big, not too small). Leave about 10 mins.
Drain and Rinse the dumplings with cold water when done.

Hungarian cucumber salad is lovely with this. But you can figure that out for yourself.

Well, DR Ann has made it part of the way home from Hawaii.  Last I heard, she was stuck in San Francisco due to mechanical problems with the plane.  So, while I guess it's no fun being stuck in an airport, she's getting more time away from the snow that awaits her in Tacoma!

About the only time I eat chicken is at a Mexican Restaurant when I can’t resist a chicken toquito.  Someplace tucked away I do have my recipe for Chicken Paprika.  Since it was my own creation I didn’t have the heart to trash it after becoming a vegetarian.

DR Ben, the lovely lady in that picture frame behind me is actress Anne Kimbell. She worked quite a bit on the stage and somewhat in films and lots of television during the 1950s. She owns a theater in Colorado now, as well as working at USC during the school year. Some of her films include: MONSTER FROM THE OCEAN FLOOR, GIRLS AT SEA, WAGONS WEST, BOMBA AND THE GOLDEN IDOL,  PORT SINISTER, and others...she is seen briefly in, MILDRED PIERCE,  BY THE LIGHT OF THE SILVERY MOON, and TWO TICKETS TO BROADWAY. Aren't you glad that you asked! Her stage work, however, is a bit more upscale...both on Broadway and in London!

She is one of my favorite actresses and quite a wonderful lady, and my interview with her will be published quite soon (hopefully this month!)
