Good Evening!
Stage one of Christmas dinner is now complete. -We're still waiting for my brother, Don, to arrive with his daughter - and new puppy. Needless to say, he got a late start heading down from Fairfax.
In the meantime, we enjoyed a meal of grilled chicken breasts, grilled New York Strips*, roast turkey,
lechon** (roast pig),
pancit (Filipino spaghetti

), fried rice, steamed white rice, and green beans. We're hold off on dessert until later.
*My Dad is very fond of marinating steaks. -Even those cuts of steak that just need to be seasoned with salt and pepper before being put on the grill. Alas, I think the vinegar-based marinade he used sort of toughened the meat, but they tasted fine.
**The lechon, roast pig, was actually cooked by some friends of my brother. In Puerto Rico! His friend's mother roasted, then froze it, then shipped it overnight packed in dry ice to the States. I'm not sure just how legal that all is, but it was pretty tasty.
