TOD: My all-time favorite pasta dish -- when it's done correctly -- is "spaghetti alla carbonara".
Happily for me, a restaurant in Berkeley called "Venezia" does the best carbonara I've had outside of Italia.
I'm also very fond of tortellini and prefer it stuffed with ham or chicken. Locally, however, it's almost always stuffed with cheese. I will occasionally find it stuffed with spinach.
I eat virtually all pasta dishes (except carbonara and pesto)with a Bolognese sauce, which I prepare myself. I do, occasionally, like something with a bit of heat (alla arrabbiata), but I can doctor my sauce with red peppers to get that effect.
I love mostly the spaghetti or linguine noodles and tortellini with the arrabbiata sauce.
And then there is pesto sauce -- ahhhhhh, heaven. I prefer it with linguine noodles. It's also a nice addition to mayo on a turkey sandwich!
