Reading on I saw recipes that made a "mash" with flower, or starch, & water. Some recipes add applesauce. Hash brown cakes are not latkes!!!
It is also possible vegan latkes won't work either. I think I like the idea of potato starch & water best.
What's not vegan about latkes? They're potatoes, onion and, most importantly, oil.

[makes equivalent of 16 eggs - 3 Tbsp = 1 egg]
¾ cup ground flax
2¼ cups water
bring water to a boil, add ground flaxseed, and let stand for 10 minutes. when it cools, it should be the consistency of egg whites or a lightly beaten egg. refrigerate in a tightly closed container for up to one week.
If you only need a small amount, for each egg being replaced, combine 1 tablespoon ground flax with 2 tablespoons boiling water.
