There are a couple of variations, but it should have contain bits of liver. -And, yes, tripe is part of the pudding/stew too. -And I still have the sense/smell memory of my mom boiling the tripe on Saturday morning's when I was a kid. That smell most definitely woke me up. Sometimes, bits of pig's ears are also added.
As for the
menudo.... That's one of my favorites. Again, there are a couple of variations. Was yours chicken or beef based? -And if it was beef-based, did it include tongue?
