We make an eggplant rollatini recipe. The filling inside the rolled eggplant is angel hair pasta with pesto sauce.

Pasta Siciliano, a recipe from an Italian restaurant in Michigan which also made the eggplant rollatini. Short version....It is sautéed onions, raisons, pine nuts, tossed into bow tied pasta and cooked in a creamy tomato spaghetti sauce.

JRand, I really enjoyed the production, right up to the Carol of the Bells at the end. You know, having some excellent singers is certainly a help, but there were no barnyard animals joining in. And that is a drawback.

In addition to your joyous Fezziwig, I liked the bubbly Ghost of Christmas Present and I found the Belle to be very touching in the way she stands up to Scrooge.

The script could have been better. And I'll refer you to the 1939 radio version I listened to last night as an example of an under-one-hour version that wasn't just a tour of highlights from the story. Lionel Barrymore was Scrooge and Orson Welles the narrator. Of course, your Scrooge wasn't a Barrymore. But I lay more blame on the shorthand of the storyteller.

Listening to two Eduard Kunneke operettas - I love this guy's orchestral music, which is fantastic. The first, Lady Hamilton, is impossible to judge because the quality of the radio broadcast is so poor and irritating - this is obviously some gray area label in the UK. As an extra, they include a short operetta which, despite the even worse quality, is better presented - it's called Traumland and is completely delightful and happily that one's available on a professionally recorded CD coupled with another operetta by someone else, so will be looking forward to that. My favorite piece by this guy is called Tänzerische Suite - find it on YouTube - it's highly addictive. He also wrote popular songs of Germany back in the day, of which one of my faves is called Sex Appeal.

Just watched the first two videos on Alvin Ailey. All I want to do is dance. And they had some socially distanced pieces that you don't need a partner for. Plus, they have classes online, including zumba for people like me who need to start moving again.
